Party Jollof Rice: Tips, Tricks and the Smoky Finish
Great party jollof is built in layers: a concentrated pepper base, well-fried tomato paste, controlled stock and gentle steaming.
Char the pepper base
Roast or air-fry the peppers, tomatoes and onion until lightly charred. Add garlic before blending for extra depth.
Fry the foundation
Fry onion, curry and thyme, then add tomato paste. Cook until it darkens slightly and the oil begins to separate before adding the blended pepper mixture.
Control the liquid
Reduce the stew properly and avoid flooding the rice. Cover tightly and let steam finish the grains without frequent stirring.
Create the party-style finish
Use controlled low heat in a sturdy pot to create toasted flavour without burning the whole batch. Rest the rice briefly before serving.
